Here is the muffin recipe that I made. it is packed full of protein too. It keeps me from getting so hungry in the mornings. With a few variations you can make all kinds of muffins. Quick and easy in the microwave for only 50 seconds.
Chocolate Hazelnut Muffin
1/4 cup ground flaxseed meal (I do not like the golden flaxseed meal.)
2 T. ground hazelnut meal
1 T. unsweetened cocoa
1 t. baking powder
dash of cinnamon
4 packets of sweetener = about 4T. sugars (adjust to your taste)
1 t. coconut oil or oil of your choice
1 egg
Spray coffee cup with oil spray. (I melt my coconut l in the cup too.)
Mix all dry ingredients together. Add egg and oil. Mix until dry ingredients are moist.
Spoon muffin mix into coffee cup and bake in microwave for 50 seconds.
When finished baking remove from come. (It should slide right out of the cup.) Butter and enjoy!
Several other options:
Gingerbread Muffin- 1) delete hazelnut meal and cocoa 2) add 1 t. Cinnamon, 1/4 t. Ginger
Pumpkin Muffin- 1) delete hazelnut meal and cocoa 2) add 1 t. Cinnamon, 2 T. Pumpkin purée
Fruit Muffin- 1) delete hazelnut meal and cocoa 2) add 1/4 cup fresh or frozen blueberries, raspberries, strawberries.
Chocolate Peanut Butter Muffin- 1) delete hazelnut meal 2) add 2 T. crunchy or creamy peanut butter
Breakfast Casserole
So many breakfast casseroles require bread as the base. Here is an easy recipe to omit the bread. Individual servings can be made in small ramekins to control portions.
Spray ramekin with oil spray.
Add Salsa (your favorite red or green salsa) to the bottom of the ramekin) about 1 T. per ramekin
Add cooked meat (chopped ham, sausage)
Veggies (spinach, onions, mushrooms, green peppers) to your liking
Cheese (Boursin, Shredded Cheddar, Monterrey Jack, Pepper Jack)
Scramble 1 to 2 eggs per ramekin and add whipping cream to egg mixture to make them fluffy and light.
If you desire to make a large dish place the ingredients in and 9 by 13 inch baking dish.
